Wild Foods in Arvada– Sat, May 3, 2024 (9:00-11:30 am) – What wild foods grow in the back yard in spring? Come learn some local spring edibles in Arvada, Colorado. We won’t be walking far, but there are plenty of plants to learn in this backyard setting. In this hands-on class, we will take a plant walk, practice foraging a few of them, discuss safety and sustainability practices, and then prepare something wild to taste. Wild Food Walk & Tasting in Loveland – Fri, May 16, 2025 (2:00-4:00 pm) – In this 2-hour walk on a beautiful ranch under towering stone buttresses we will learn edible plants that grow in disturbed settings (weeds!) as well as native plants common to high prairies. There will be opportunities for field tasting, and a discussion of safety and sustainability practices. I will have signs with the plant names if you would like to use your camera to take notes. Foraging Loveland – ALL DAY – Sat, May 17, 2025 (9:00 AM-3:00 pm) – This 6-hour hands-on class takes place on a beautiful ranch outside Loveland, Colorado. The day starts with a morning plant walk, safety and sustainability discussion, and hands-on foraging and food preparation to create a wild dish to enjoy with our lunches. In the afternoon we’ll see more plants! We’ll learn edible plants that grown in disturbed settings (weeds!) as well as native plants common to high prairies, like prairie onions and wild tarragon. Forest Hike: Meadow Creek in Frisco – Wed, May 28, 2025 (9:00 am-1:00 pm) – What wild foods grow in a mountain forest in spring? In this class, we’ll hike a section of the Meadow Creek/Lily Pad Lake trail in Frisco, Colorado, learning edible native plants of aspen/conifer forests and sagebrush meadows–like cow parsnip, twisted stalk, bluebells, mountain springparsley, and wild tarragon–plus some non-natives. If the plants are flourishing (likely) then we’ll forage some wild vegetables and cook them up back at the trailhead. I am super excited to be able to offer this class for the first time this year, with permission from the USFS. Hosted by WFG ($90)

Foothills Foraging ALL DAY – Thurs, June 19, 2025 (9:00 AM- 3:00 PM) – This 6-hour class will take place in the foothills above Littleton, Colorado, at a gorgeous private camping retreat with outdoor kitchen. The day starts with a morning plant walk, safety and sustainability discussion, and hands-on foraging and food preparation to create one or more wild dishes to enjoy with our lunches. In the afternoon we’ll see more plants, followed by more tasting of plants we haven’t yet explored. This special habitat includes a good variety of edible weeds in the sunny areas, a forest walk among scrub oaks and chokecherries, and even a small population of osha we can observe. There will be an opportunity for field tasting, and a discussion of safety and sustainability practices. This is a short walk in a town/yard setting, where there are many edible plants to see and taste! I will have signs with the plant names if you would like to use your camera to take notes. Forest Hike: Miner’s Creek to Rainbow Lake in Frisco ALL DAY – Wed, July 2, 2025 (9:00 am-3:00 pm) – What wild foods grow in a mountain forest in summer? In this class, we’ll hike Miner’s Creek trail to Rainbow Lake in Frisco, Colorado, learning edible native plants common to aspen/conifer forests and sagebrush meadows, as well as some non-natives. We’ll taste along the trail, and if we find plants or mushrooms that are flourishing, we’ll forage and cook something back at the trailhead. Other activities may include: learning botanical terms, plant ID by group, how to use a flora, and/or something hands-on from my backpack. No matter what, it will be a full, fun day!
