Edible Wild Plants: Identify, Harvest & Prepare ALL Day in Cripple Creek – Sat, June 13, 2026 (9:30-3:30) – Learn to identify, harvest, and use edible wild plants in this hands-on course at Survival University, which has many acres of forested land to enjoy. We’ll do plant walks, food prep, and sampling, cover when and where to harvest, and how to process wild plants into palatable foods. Price includes 2 nights of camping if you want to come early and stay late. Hosted by The Survival University. ($175) Ask me for a coupon!

Plant Walk & Field Tasting in Fairplay – Sat, June 20, 2026 (10:00 AM -12:00 PM) – What wild plants grow in a mountain town? In this 2-hour walk we will learn edible plants of disturbed settings (weeds!) and native plants of aspen groves and meadows. There will be opportunities for field tasting, and a talk on safety and sustainability. This is a short walk in a town/yard setting, where there are many edible plants to see and taste! I will have signs with the plant names if you would like to use your camera to take notes. Hosted by WFG. ($50)

Edible Foraging + Cooking – Sunday, June 28, 2026 (9:00 AM – 12:00 PM) – What edible plants grow in Breckenridge? Join WFG for a walk and talk on wild plants in the area—including plant identification, sustainability information, harvesting practice, and uses—followed by hands-on food preparation and a tasting back at the Arts District. Hosted by Breckenridge Creative Arts. ($68-98)

Forest Hike: Summit County – Thursday, July 2, 2026 (9:00 AM – 3:00 PM) In this class, we’ll hike a trail out of Frisco, Colorado, learning edible native plants and mushrooms common to high country aspen/conifer forests and sagebrush meadows, as well as some non-natives. We’ll taste along the way, and if wild food is abundant, we’ll forage and prepare something to sample. We also may do a hands-on activity from my backpack. No matter what, it will be a full, fun day! Offered with UFSF permission. Hosted by WFG. ($130)

Wild Foods in Fairplay (hands-on) – Saturday, July 11, 2026 (9:30 AM -12:00 PM) What wild food grows around a high country town? We’ll start with a plant walk to learn local wild edibles, including disturbance-loving plants (weeds!) in a town setting and plants native to aspen groves and meadows. We will talk about safety, legality, and sustainability, and I will have signs with the plant names so you can use your camera to take notes. In the second half of the class we’ll forage a few plants and prepare something to taste. Hosted by WFG. ($65)

Forest Hike: Tanglewood Trail – Wednesday, July 22, 2026 (9:00 AM – 3:00 PM) – In this class, we’ll hike the Tanglewood/Rosalie Trail out of Bailey, CO learning edible native plants (and hopefully mushrooms!) common to coniferous forests, as well as some non-natives. We’ll taste along the way, and if wild food is abundant, we’ll forage and prepare something. We also may do a hands-on activity from my backpack. No matter what, it will be a full, fun day! Edible Plants Native to Colorado – Tuesday, July 28, 2026 (4:00-5:00 PM) – In this hour-long PowerPoint presentation we will learn a selection of edible plants native to Colorado, including how to identify, harvest, process, and use them sustainably. We’ll look at how these plants have been used by Native peoples, while recognizing that Indigenous knowledge is diverse, living, and specific to individual communities. We’ll taste along the way, and forage and prepare something if food is abundant. Other activities may include: plant ID by group, how to use a flora, and/or something hands-on from my backpack.
