Native Mountain Vegetables

This class focuses on native vegetables of the Rocky Mountains, including cow parsnip (Heracleum maximum), bluebells or oyster leaf (Mertensia species), heartleaf bittercress (Cardamine cordifolia), wild tarragon (Artemisia dracunculus), fireweed (Epilobium angustifolium), mountain sorrel (Oxyria digyna), and yellow stonecrop (Sedum lanceolatum), plus lookalikes. Many of these plants or their close relatives can be found in the northern US too.
