Native Prairie Vegetables

This class focuses on some of our best native vegetables of the shortgrass prairie, including yucca (Yucca glauca), showy milkweed (Asclepias speciosa), prickly pear (Opuntia spp.), and prairie turnip aka tinspila (Pediomelum esculentum), along with an introduction to other edible natives including sand lily (Leucocrinum montanum), wavyleaf dandelion (Nothocalais cuspidata), paintbrush (Castilleja spp.), scarlet globemallow (Sphaeralcea coccinea), and spiderwort (Tradescantia spp). Many of these plants (or their close edible relatives) are also found in regions like the desert Southwest and Eastern Woodlands, so we explore their uses across these landscapes too.
