
Spring Edibles
There’s nothing like foraging the abundance of spring! This class focuses on a handful of great spring edibles including stinging nettles (Urtica dioica), cutleaf coneflower (Rudbeckia laciniata), creeping bellflower (Campanula rapunculoides), wood sorrel (Oxalis species), and cutleaf vipergrass (Scorzonera laciniata)—a little-known but excellent food. We briefly touch on a few other spring edibles so you can be on the lookout for those too.
