Wild Shoots
Many plants produce edible shoots in mid to late spring–the most famous of which is asparagus. In this class, we learn a variety of edible wild shoots including thistles (Cirsium, Carduus, and Onopordum species), wild asparagus (Asparagus officinale), cattails (Typha species), twisted stalk (Streptopus amplexifolius), false Solomon’s seal (Maianthemum racemosum), hops (Humulus lupus) and more.
