Description
You may know lamb’s quarters as “wild spinach,” but there are quite a few relatives—all in the Amaranth family—that can be used as mild, spinach-like greens. In this class we’ll review lamb’s quarters and several related goosefoots before taking a deep dive into some of their useful wild relatives—including orache (Atriplex species), strawberry spinach (Chenopodium capitatum), kochia (Kochia scoparia), Russian thistle (Salsola species), and opon or patota (Monolepis nuttalliana). We’ll briefly touch on a few others so you can be on the lookout for those too.
