Fireweed shoots (Epilobium angustifolium) are edible, but astringent unless you peel them. Look at the underside of the leaf and see if you can make out its unique leaf veins. Instead of extending to the edges of the leaves, they join together in loops in the inner margins (Tilford, 1997).
