Description
Many plants are newcomers to our landscapes, and some are very successful—to the point of displacing native species. In this class we look at what defines an “invasive” plant, why they are such good candidates for foraging, and how to search noxious weed lists for interesting edibles in your region. We dive into a few listed species that make good edibles, including Japanese and giant knotweed (Reynoutria species), Siberian elm (Ulmus pumila), chicory (Cichorium intybus), dittander (Lepidium latifolium), and burdock (Arctium spp.). Then we briefly touch on a few others so you can be on the lookout for those too.
